Lamb has to be one of the easiest meats to barbecue or roast. It’s a good source of protein, zinc and B12.

The flavors from all the ingredients go surprisingly well with lamb. A dinner that can be ready in about 15 minutes.

Ingredients (serves 2)
6 lamb cutlets
100g watermelon cubed
100g cooked green beans
50g low fat feta cheese crumbed
1 tsp balsamic vinegar
1 tbsp olive oil
Salt and pepper

Method
Season lamb cutlets and add ½ tbsp of olive oil. Heat pan or hot plate grill add cook lamb cutlets for approximately 2 minutes on each side. Place the cooked green beans on a plate and place watermelon and feta over the top. Place cooked lamb cutlets on top and add the remaining olive oil and balsamic vinegar.
