Ease into winter with this delicious ‘complete meal’ chicken soup.
Ingredients
• 1kg chicken pieces (skin removed)
• 3 litres chicken stock or water w/ 3 chicken stock cubes• 2 large carrots, chopped into large chunks• 2 brown onions, finely sliced• 2 pieces of celery, roughly chopped• 250 ml uncooked rice• 2 packets chicken noodle soup• 1 green apple, peeled and chopped• Salt and pepper• Chopped parsley to serve
Method
Place stock, chicken pieces (use large whole pieces), onions, chicken noodle soup and salt and pepper into a large boiler/saucepan and bring to boil. Reduce to a simmer and cook for 1 to 1.5 hours. Add the rice, carrots, celery and apple and cook for a further 1.5 hours. Skim any residual fat and serve with a large piece of chicken in each bowl, plenty of liquid, chopped parsley and a warm, crusty bread roll.
