A tasty summer salad that will keep you feeling fuller for longer!

Ingredients (serves 4)

  • 4 baby potatoes,cut into halves
  • 1 handful cooked
  • green beans
  • ½ tbsp olive oil
  • 1 tsp balsamic vinegar
  • 2 drops sesame oil
  • 1 tsp sesame seeds
  • 50g smoked salmon
  • 1 tsp chives, finely chopped
  • 1 tbs lemon juice
  • 2 tbs light sour cream

Method

Heat a saucepan with water on a moderate heat to cook the potatoes. Once the potato is cooked, refresh under cold water and set aside.

Boil the green beans and refresh under cold water and place into a bowl along with the potatoes. Add the olive oil, balsamic vinegar, sesame oil and sesame seeds to the potato and green beans.

Place the beans and potatoes onto a plate. Top with smoked salmon.

Add the chopped chives and lemon juice to the sour cream in a small bowl. Mix together and pour over the top of the beans and potatoes. This dish can
be refrigerated and served cold.
