Grilled chicken breast with a quinoa salad (vegies and quinoa included in salad)

I love eating salad. It’s a simple way for me to get a ton of vegetables (and the vitamins, minerals and fibre) in one delicious and filling meal. I add the quinoa for extra taste, variety and healthy carbs, as I prefer quinoa to rice (a bonus is that there is more fibre and protein per serving).
