Method
Mix all the sugar syrup ingredients together and cook over a slow heat until all sugar is dissolved. Take off heat once syrup becomes thicker. Rub lemon pepper into duck. Add the cooking sherry and zest to duck. Wash the potatoes, cut into halves and place on BBQ.
Place duck skin side down on a hot BBQ plate and cook for approximately 7 minutes on each side. Take the duck off heat and cover with foil. Cook the spinach on the BBQ. Slice the duck and serve together with the cooked potato and spinach. Add 1-2 tbsp of the sugar syrup over the duck to taste.
