Egg and bacon encocotteIngredients
1 egg
50g lean bacon diced finely
1 spray virgin olive oil for pan

Lightly spray a ramekin and place diced bacon on the bottom. Crack an egg into the ramekin. Place the ramekin onto a baking dish that has been filled slightly with water (Bain-Marie) and place in the oven at 160 degrees for about 10 minutes. Serve with toast if desired.
