Chocolate puddings with soft centre - Easter recipes - Women's Health & Fitness

Ingredients (serves 6)

  • 200g cooking chocolate
  • 1 egg
  • 2 egg whites
  • 1 tbs sugar
  • 2 tbs plain flour
  • 2 tbs strawberry jam

Method
Pre-heat the oven to 200°C. Place a bowl over a saucepan of water and bring to the boil. Break the chocolate into small pieces, place in the bowl over the saucepan and allow to melt slowly. Once the chocolate has melted take the bowl off the saucepan and allow to cool.

Place the eggs and sugar in a mixing bowl and gently beat until the sugar has dissolved. Add the flour and jam and mix to combine. Gently fold in the melted chocolate until combined.   

Spoon the chocolate mixture into ramekins arranged evenly on a baking tray. Place the tray in the oven and cook for 10 minutes. Serve immediately to be sure you achieve a soft centre and avoid overcooking the puddings.
