Ingredients
200g of cooked prawns, shelled and de-veined
2 cups of rocket or mixed lettuce
1 mango peeled and sliced thinly
1 Lebanese cucumber sliced
Dressing:
2 tbsp of fresh lime juice
1 finely chopped red chilli (de-seeded)
4 tbsp of Verjuice
Cracked pepper to season
Method
Place rocket or mixed lettuce into a bowl. Add prawns, mango and cucumber. Mix dressing with a fork and add over salad ready to serve.
