Don't waste those capsicums sitting at the bottom of the crisper. Put ageing produce to work in this high protein and low carb recipe for beef skewers.

Serves 4


Ingredients
•    500 g scotch fillet or eye fillet, cut into cubes
•    2 tbsp soy sauce
•    1 tbsp honey
•    2 tsp balsamic vinegar
•    1 red capsicum
•    1 green capsicum
•    8 bamboo skewers

Method
Heat oven grill on high. To prepare marinade, mix soy, honey and balsamic vinegar in a bowl until smooth. Add the meat and leave to marinate in refrigerator for one to two hours. Soak bamboo skewers in water for an hour to prevent them from burning when grilling. Cut red and green capsicum into cubes. Alternately arrange meat, and red and green capsicum on each skewers, ending with a piece of meat. Cover a tray with silver foil, place skewers on tray and grill each side for three minutes (or to your liking).
