Get your taste buds tingling with this satisfying one-pot meal

 

Ingredients (serves 4)

•    500g firm white fish cut into chunks
•    3 anchovy fillets, rinsed and chopped
•    2 onions, diced
•    2 celery sticks, chopped
•    2 carrots, peeled and chopped
•    3 garlic cloves, minced
•    ½ tsp chilli
•    ¼ cup flat leaf parsley, chopped
•    1 can (400g) diced tomatoes
•    1 cup white wine
•    1 cup water
•    1 tsp finely grated orange zest
•    Olive oil or olive oil spray
•    Crusty baguette, sliced (optional)

Method
Heat oil over medium heat and add the onions, celery and carrot. Stir until tender and add garlic, chilli flakes and parsley. Stir in anchovies and tomatoes and cook for 5 minutes, stirring. Add the wine and bring to the boil for 5 minutes.

Add the water, stir in orange zest and fish chunks, salt and pepper and simmer for another 15 minutes. Serve with crusty bread if desired.
