This nut-rich granola is homemade and all natural for a delicious start to the day!

Preparation is key to any healthy lifestyle, so be prepared and whip up a big batch ahead of time for your everyday meal.

Ingredients (serves 4)
•    2 cups coconut flakes
•    1 cup amaranth seeds
•    ½ cup activated almonds
•    ½ cup raw cashews
•    ½ cup walnuts
•    ½ cup sunflower seeds
•    ½ cup raw pepitas (dried pumpkin seeds)
•    2 tbsp chia seeds
•    1 tsp cinnamon
•    2 tsp coconut oil, melted
•    1 tsp rice malt syrup
•    Coconut yoghurt, to serve
•    Fresh raspberries, to serve
•    Toasted buckinis, to garnish

Method
Preheat oven to 180°C and prepare two baking trays with baking paper.

In a bowl, mix the dry ingredients and stir in the coconut oil and rice malt syrup. Evenly distribute the mix across the trays and bake for 15 minutes, or until golden and crunchy, swapping trays halfway during cooking and tossing ingredients.

Set aside and allow to cool, then serve with coconut yoghurt and fresh raspberries, with toasted buckinis as a garnish on top.
