Fire up the barbecue for this healthy summer snack

Thai chicken patties with avocado salsa - Women's Health & Fitness

Ingredients (serves 4)

  • 300g lean chicken mince
  • 125g canned sweet corn
  • 2 tbsp Thai curry paste
  • 1 egg white lightly beaten
  • 4 tbsp corn flour
  • ¼ cup chopped fresh coriander
  • Spray oil

Avocado Salsa:

  1. ½ avocado diced
  2. 2 tbsp lemon juice
  3. 3 tbsp of chopped coriander
  4. 1 tsp chilli sauce

Method
Mix together chicken, sweet corn, egg, curry paste, cornflour and coriander in a bowl. Make into patties and cook on barbecue or lightly oiled pan. Mix together all salsa ingredients and serve with patties.
