Thai Chicken Patties with Avocado Salsa

Thai chicken pattiesIngredients
300g lean chicken mince
125g canned sweet corn
2 tbsp Thai curry paste
1 egg white lightly beaten
4 tbsp corn flour
¼ cup chopped fresh coriander
Spray oil
Avocado Salsa:
½ avocado diced
2 tbsp lemon juice
3 tbsp of chopped coriander
1 tsp chilli sauce

Method
Mix together chicken, sweet corn, egg, curry paste, cornflour and coriander in a bowl. Make into patties and cook on barbecue or lightly oiled pan. Mix together all salsa ingredients and serve with patties.
Serves 4.

I just made these for dinner and they turned out beautifully. I accidentally omitted the cornflour and added a whole egg but the recipe still worked. I sealed them in a non-stick fry pan and then baked them in the oven for a further 20 minutes.
